Pav bhaji is a popular street food dish from India that consists of a thick vegetable curry (bhaji) served with a soft bread roll (pav). Here's a recipe to make pav bhaji:
Ingredients:
- 2 large potatoes, boiled and mashed
- 1 cup cauliflower florets
- 1/2 cup green peas
- 1 medium onion, chopped
- 1 medium tomato, chopped
- 1 green bell pepper (capsicum), chopped
- 2-3 garlic cloves, minced
- 1 inch ginger, grated
- 2-3 green chillies, chopped
- 2 tablespoons oil or butter
- 2 tablespoons pav bhaji masala
- 1 teaspoon cumin seeds
- 1 teaspoon red chilli powder
- Salt to taste
- Lemon wedges
- Buttered pav rolls
Instructions:
- In a pressure cooker, cook the cauliflower florets and green peas until soft. Mash the cooked vegetables with a potato masher or a fork and set aside.
- In a large pan or kadhai, heat oil or butter and add cumin seeds. When they start spluttering, add chopped onion and sauté until translucent.
- Add minced garlic, grated ginger, and chopped green chillies. Sauté for a minute or until the raw smell disappears.
- Add chopped tomato and bell pepper. Cook for 2-3 minutes or until the tomato becomes soft and mushy.
- Add pav bhaji masala, red chilli powder, and salt. Mix well and cook for a minute.
- Add mashed potatoes, cauliflower, and green peas to the pan. Mix everything well and cook for 5-7 minutes on medium heat, stirring occasionally.
- Add a little water if the bhaji is too thick. Mash the vegetables further with a potato masher or a hand blender to get a smooth consistency.
- Cook for another 2-3 minutes or until the bhaji is heated through.
- Toast the pav rolls with some butter on a griddle or tawa.
- Serve hot bhaji with a dollop of butter, a squeeze of lemon juice, and toasted pav rolls.
