 Punjabi chole is a popular North Indian dish made with chickpeas and a blend of aromatic spices. Here is a simple recipe for Punjabi chole:





Ingredients:


2 cups chickpeas (also called garbanzo beans or kabuli chana)

2 onions, finely chopped

2 tomatoes, finely chopped

2 green chilies, finely chopped

1 tablespoon ginger-garlic paste

1 teaspoon cumin seeds

1 teaspoon coriander powder

1 teaspoon garam masala powder

1 teaspoon amchur (dried mango powder)

1 teaspoon red chili powder

1 teaspoon turmeric powder

Salt, to taste

2 tablespoons oil

Water, as required

Coriander leaves, for garnishing


Instructions:

Soak the chickpeas in water overnight or for at. least 6-8 hours. Drain the water and rinse the chickpeas.

In a pressure cooker, add the chickpeas and enough water to cover them. Add some salt and pressure cook for 4-5 whistles or until the chickpeas are tender. Set aside.

In a pan, heat oil and add cumin seeds. When the seeds start to crackle, add chopped onions and sauté until they turn golden brown.

Add ginger-garlic paste and green chilies and sauté for a minute.

Add chopped tomatoes and cook until they are soft and mushy.

Add coriander powder, garam masala powder, amchur, red chili powder, turmeric powder, and salt. Mix well and cook for 2-3 minutes.

Add the cooked chickpeas along with some water (around 1 cup) and mix well. Bring the mixture to a boil.

Reduce the flame and let the chole simmer for 15-20 minutes until the gravy thickens and the chickpeas absorb the flavors.

Garnish with fresh coriander leaves and serve hot with bhatura, rice, or any Indian bread of your choice.
